Whitlaw and Secret Orkney typically refer to Highland Park distillery on the labels of independent bottlings as the legendary distillery usually prefers to keep the name to itself. This is an atypical bottling in at least two ways. First, the label. It says ‘Whitlaw’ but also says ‘Distilled at Highland Park distillery’. Second, the maturation. Highland park is usually matured in sherry casks. Sometimes in bourbon casks. But this bottling spent the last one and half year of its maturation in a cask of a legendary red wine estate of France: Chateau Latour.
