Description

Distilled at Caol Ila in March 2007 and bottled by North Star Spirits in August 2025, this limited-edition release reimagines Islay’s smoky classic through the lens of fine Burgundy wood. The influence of the Pinot Noir cask brings a subtle red-fruit richness to the maritime smoke, creating a layered dram where brine and embers meet raspberries and soft spice. Bottled at 54.4 % ABV, non-chill-filtered and natural in colour, it shows Caol Ila’s elegance in full maturity — vibrant yet composed, with the red-wine finish adding depth without muting the island character.
