Description

Holyrood opened in 2019 as the first new distillery in Edinburgh in nearly a century, housed in a beautifully restored Victorian railway goods shed dating to the 1830s and co-founded by David Robertson, the former master distiller at Macallan — ambition was never in short supply here. Armed with the second-tallest stills in Scotland and a firmly experimental philosophy, Holyrood has quickly become one of the most exciting young distilleries in the country. This heavily peated spirit was moved from its original cask after just one year and re-racked into a PX Sherry Quarter Cask, where it spent three more years soaking up rich, syrupy sweetness — the result is a nose of cheesecake, apricots in syrup, fudge and cocoa, a palate packed with custard, cream and dessert-sweet fruit, and a long finish where gentle smoke finally makes its presence felt. Bottled at 56.5% cask strength as part of Claxton's Warehouse No. 1 series, just 175 bottles from cask C25134.
